Indian Bean Couscous Salad

 

  • 1 Box Flavored Couscous (Sun Dried Tomato or Curry)

  • 1 Can Black Beans (drained)  

  • 1 Can Pinto Beans (drained)

  • ½ Cup Chopped Celery

  • ½ Cup Chopped Red Onion

  • ¼ Cup Chopped Red Pepper

  • ¼ Cup Chopped Green Pepper

  • 1/3 Cup Lime Juice

Cook Couscous as directed on box – let chill.  Drain and rinse the beans, and add to the chilled couscous.  Combine all other ingredients.  Chill in refrigerator before serving.

* Optional: ¼ Bunch Fresh Cilantro ( stems removed, then chopped)
