Caribbean Couscous Salad

  • 1 Box Flavored Couscous (Pine Nut version is preferred)

  • 1 Can Black Eyed Peas (drained)

  • ½ Cup Chopped Celery

  • ½ Cup Chopped White or Red Onion

  • ¼ Cup Chopped Red Pepper

  • ¼ Cup Chopped Green Pepper

  • ¼ Bunch Fresh Cilantro ( stems removed, then chopped)

  • 1/3 Cup Lime Juice

Cook Couscous as directed on box – let chill.  Drain and rinse the black eyed peas, and add to the chilled couscous.  Combine all other ingredients.  Chill in refrigerator before serving.

 

[Note from Myrl]:  If I have extra pine nuts on hand, I sometimes add them to this recipe.
